Auntie Val's
Sussex Special Preserve Cake

100g/4oz butter or margarine
100g/4oz brown sugar
3 large eggs
7oz self-raising flour
12oz Sussex Special  Preserve
4 tablespoons milk

Grease and 18-20cm/8inch cake tin
Cream butter and sugar well
Beat in the eggs, one at a time, if it begins to curdle add some flour.
Stir in Auntie Val's Sussex Special  Preserve and fold in the flour, add the milk if needed to obtain a moist mixture
Bake in a moderate oven Gas Mark 3/160c/325F for 1.25 hours
